Dark plum, fig, red cherry, dried herbs, flavours of strawberries, cranberries & exotic spices.
Product Description
- Colour: Purple coloured intensity, with a red/pink hue.
- Aromas: Aromas of red plums, fig and dried roses.
- Palate: Finely textured palate of clove-spice, black tea and cherries.
Growing Season
Cooler growing and ripening season, above average rainfall during the growing season, produced wines with more elegance and grace. The latest ripening season on record, giving fruit more hang time, resulting in wines with perfect acidity and tannin balance and fruit purity. 2023 wines will need patience and cellaring will reward.
Vinification
Crushed and destemmed to an open top fermenter, where cooling was employed throughout the fermentation between 18-28oC. There was two pump overs and one hand plunge every day to optimise flavour, colour and tannin extraction. After 7 days of primary fermentation, the fermented wine was then gently Basket Pressed to a settling tank for 2 days, where it was then racked to new and older French oak barrels to undergo Malolactic fermentation. 10 months barrel aging, all older French oak.
