2021 Yattalunga Shiraz

Estate Vineyard located in “Yattalunga” in One Tree Hill. Displays complex aromas of roasted nuts, earth, spice and mint, Layered flavours of dark fruits, cola and espresso. Lovely texture and great tannin profile.

The 2021 vintage has been put down as the vintage of the century. Everything was in check; growing and ripening period was perfectly ideal to make wines of incredible pedigree. Everyone needs wines from the great 2021 vintage in their cellars.

A hand selection of Shiraz from our estate vineyard “Yattalunga’ located in the heart of One tree Hill. The fruit is hand pick, destemmed an open top fermenter, where cooling was employed throughout the fermentation between 18-28oC. There was two pump overs and one hand plunge every day to optimise flavour, colour and tannin extraction. After 6 days of primary fermentation, the fermented wine was left on skins for a further 4 weeks, before being gently Basket Pressed to a settling tank for 7 days, where it was then racked to 100% New French oak puncheons to undergo Malolactic fermentation. Post MLF a further 18 months barrel aging on fine LEES, before being bottled unfined and unfiltered.
