2021 BLOCK 5 SHIRAZ

It's superbly fruited and gorgeously expressed on the nose with black/blueberry, rich floral, cedary oak, clove and mocha characters, leading to a concentrated palate displaying silky texture and refined mouthfeel. Selected from a single block of Shiraz in One Tree Hil.

• Colour: Very dark purple coloured intensity, with a black to purple rim
• Aromas: Intense aromas of smoked meats, leather, preserved plums and five-spice.
• Palate: Structured in style, this wine is jammed packed full of dark-black fruit characters, layers of fine tannins with a whisper of creamy oak influence.

The 2021 vintage has been put down as the vintage of the century. Everything was in check; growing and ripening period was perfectly ideal to make wines of incredible pedigree. Everyone needs wines from the great 2021 vintage in their cellars.

A hand selection of Shiraz from a single block, within a Single vineyard. The fruit is hand pick, destemmed an open top fermenter, where cooling was employed throughout the fermentation between 18-28oC. There was two pump overs and one hand plunge every day to optimise flavour, colour and tannin extraction. After 6 days of primary fermentation, the fermented wine was then gently Basket Pressed to a settling tank for 7 days, where it was then racked to 100% New French oak puncheons to undergo Malolactic fermentation. Post MLF a further 18 months barrel aging on fine LEES, before being bottled unfined and unfiltered.
