2025 GSM - New Release

A blended wine, medium bodied in style, with spice, violets and ripe red fruits, with a silky & soft finish.

Warmer growing and ripening season, lower than average rainfall during the growing season, produced wines with more generosity and riper fruit characters and a greater depth of flavour. Warmer conditions giving softer, rounded tannins, plush fruit notes, and seamless structure. 2025 wines are not for the faith hearted; they are very generous, easy drinking with immaculate balance and structure.

All 3 varieties (Grenache, Shiraz and Mataro) were vinified separate, aged separate, and blend just prior to bottling. Each variety was crushed and destemmed to an open top fermenter, where cooling was employed throughout the fermentation between 18-28oC. There was two pump overs and one hand plunge every day to optimise flavour, colour and tannin extraction. After 5-7 days of primary fermentation, the fermented wine was then gently Basket Pressed to a settling tank for 2 days, where it was then racked to new and older French oak barrels to undergo Malolactic fermentation. 10 months barrel aging, all older French oak.
